I would suggest building two models with different physical
characteristics (width of tube, length of tube, volume of reservoir,
etc.), noting the differences in their behavior, suggesting several
possible reasons for the observed differences, and then devising a test to
see which of these reasons is right.

Care should be taken with geyser models, as all models involve flames or
electric heat sources, spray hot water everywhere, and, if constructed of
glass, could break suddenly.  The most likely time for breakage to happen
is immediately following the eruption, if you have put a funnel on top of
the geyser to catch the erupted water.

Pretty much anything with a reservoir attached to a long narrow tube will
erupt.
